Grown-Up Grilled Cheese: Cuban Style

Our visit to Fair Oaks Farms a couple weeks ago inspired this Cuban Grilled Cheese sandwich. They have a Cuban sandwich that is sub-par as well as a grilled cheese that is far from living up to my standards. I thought I could combine both ideas into one and come up with something super tasty that is actually not too bad for you.

I know, what you're thinking...how can grilled cheese not be bad? Well, it has to do with the ingredients and the form of cooking. I actually got out the panini maker for this one and used a little bit of non-stick spray instead of having it drown in butter. I also used better-for-you lean turkey and ham instead of pork. Some honey mustard rounds it out to give a little bit of sweetness to offset the tangy bite of the Swiss cheese.

Cuban-Style Grilled Cheese

2 slices ham
2 slices turkey
honey mustard
2 slices swiss cheese
4 sweet pickle slices
2 slices thick bread

1. Spread a thin layer of honey mustard mustard on bread slices.
2. Layer everything else on top.
3. Grill until cheese is melted and bread is golden brown.
