Apple Cinnamon Muffins


Muffins are one of life's little treats. Most muffins you buy at the store or the donut/coffee shop are filled with way too many unhealthy ingredients and calories though. Now, I'm not saying that it's not okay to splurge on a muffin every once in awhile, but if you're going to have one, why not have it be one that's better for you! I created this version of an apple cinnamon muffin using ingredients that you don't have to feel guilty about and it's now my go-to recipe.



They're great with a yogurt for a quick and satisfying breakfast and they're even great for a snack for you or the kids. They're moist, full of flavor and they freeze great!

Apple Cinnamon Muffins


2 cups flour

1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 canola oil
1 egg
1/3 c honey
1 tsp cinnamon
1/2 c applesauce
1/4 c milk
1 large or 2 small apples, diced small


1. Preheat oven to 350.
2. Mix dry ingredients together in large bowl.
3. Mix wet ingredients together in separate medium-sized bowl.
4. Incorporate the wet ingredients into the dry, mixing well.
5. Fold apples into batter.
6. Fill greased or lined muffin tins 2/3 full and bake for 18-20 minutes or until toothpick inserted in center comes out clean.
