So Simple Avocado Salad


It's avocado season! I don't usually buy them but every once in a while, I splurge and treat myself to the creamy, greeny goodness. I wait until the price goes down so I can get a few though. They can be so darn expensive!

I purchased some small ones at the grocery store yesterday to use specifically in a salad that I was cookin' up in my head. Avocados are excellent on their own, but I was feeling creative so I had to do something different with them. Since I'm big into the whole salad thing this summer, I was thinking of something light and simple to go with the warm weather.

There are only a few ingredients tossed with a light and simple dressing consisting of lime juice and a bit of honey. I added the honey to offset the saltiness of the added cheese. (I may have gone a little crazy with the cheese for the photo so I'd suggest using a bit less than I did or the salad might be too salty.) 

The finished result was a tart and sweet salad with a myriad of flavors that just blended so well together. This salad was so simple and so fresh tasting that I might just have to get avocados a little more often.


Avocado, Tomato and Onion Salad


2 small avocados - pitted, peeled and sliced (see How to Cut an Avocado)
1 roma tomato - seeded and sliced
1 TB red onion - thinly sliced

Dressing

1 TB lime juice
1/8 tsp honey
pinch of salt
dash of pepper

1 - 2 TB crumbled Queso Fresca for garnish



1. Mix dressing ingredients together.
2. Toss dressing with avocado, tomato and onion.
3. Sprinkle Queso Fresca over salad and serve.

Queso Fresca is a very mild, salty cheese used in Mexican dishes. If you aren't a fan, you could substitute cottage cheese or even some fresh mozzarella. This salad would go great with my Steak Fajitas or you could just make it a meal by itself. It's light and refreshing and I hope it adds a little change of pace to your day!
