A Berry Good Slice of Pineapple

I bought a pineapple at the store the other day and I couldn't stop wondering what I should do with it. Of course, we could all just eat it as is because fresh pineapple is so fantastic, but I'm sure you know by now that I have to do something different with it.

I thought I'd keep it simple because sometimes it's the simple things that are the best. I had sliced the pineapple up earlier in preparation for whatever I might do so the hard part was done. I thought about grilling it, but to be perfectly honest, I was just too tired after a long day to get out and set up anything grill-related. At 10 pm, the stove top sounded just as good. I decided on a simple pan-fried pineapple. I doctored it up with some sugar and spice to make it sweet and fragrant and it really added some depth to the pineapple flavor.
While it was cooking, I was struck with the idea to make a raspberry sauce to go with it. I've never seen that kind of sauce with pineapple before, so I thought I'd just go for it.  The taste of the pineapple was quite good and the raspberry sauce added a tartness that offset the caramelized sugar well. The whole thing wasn't too sweet and there was a nice richness from the pan cooking method. I bet it would go great with a scoop of vanilla ice cream.

I have a little leftover sauce...so what should I make next?




Spiced Pineapple Slice with Raspberry Sauce


1 thick slice from a medium/large fresh pineapple
1/2 tsp honey butter (3 TB butter mixed with 1 TB honey, but regular butter is just fine)
1/4 tsp brown sugar
dash cinnamon


raspberry sauce
1 c frozen raspberries
1 TB sugar
1 TB lemon juice
1 tsp water
1/2 tsp cornstarch


1. Melt butter in small non-stick pan and add pineapple slice.
2. Sprinkle top with brown sugar and a little cinnamon.
3. Cook each side over medium-low heat until browned and slightly caramelized.


For sauce:
1. Place all ingredients into microwavable bowl.
2. Cook on high for three minutes.
3. Puree in blender.
4. Drizzle desired amount over pineapple slice.
