If there's one thing my mom always goes to in terms of potato dishes, it's this. She's made it for years and always just whipped it up every time. She never followed a recipe but knew exactly what she was doing so it was the same delicious flavor every time. Moms are funny like that...
I've made it a couple times myself but I'm one of those people that are always trying to improve on a recipe even if it doesn't need it. I figured I would write it down the time I finally got it to taste like the potatoes my mom used to make. It's a simple dish, but it has such a nice, buttery flavor that goes with absolutely anything. Chicken? Yep. Steak? Of course. Fish? You betcha. Heck, they're even good by themselves without anything else!
Steamed and Buttered Red Potatoes
Ingredients
• 5-6 medium sized red potatoes, cut into 1 1/2" cubes
• 1/2 c water
• 3 TB butter
• 1/4 tsp salt
• 1/4 tsp pepper
• 1 TB parsley
Directions
Place everything in a medium-sized saucepan. Turn heat to low and cook until butter is melted. Stir lightly, cover, and cook over low heat for 15-20 minutes or until potatoes are tender. Toss potatoes around a little - with lid still on - halfway through cooking time.
