Mini Veggie Pizza Bites


I love little food. (Let's be real though...is there anyone who doesn't?) So when I came across some little pizza bites one day, I just knew I had to make them for a party we were going to.

The little bite-sized pepperoni bites happened to be a recipe by Rachel Ray. I'm not a fan of hers at all. I won't get into reasons here, but just know that it took everything I had to look past my dislike and make one of her recipes. I tweaked it a little to put my own spin on it and they came out great.

After the pepperoni ones were made, I made a veggie version. I don't really like pepperoni much so I wanted to have an alternative for the veggie lovers. As my regular readers know, I like to use what I have on hand. I always have peppers and onions but I wanted something else. After a little cabinet searching, I found a can of olives! Perfect! This recipe is pretty versatile though so you could throw in your own favorite pizza topping to make these bites unique!

They were all snatched up pretty fast at the party so be sure to grab a few before you put them out for serving or you'll be outta luck...

Mini Veggie Pizza Bites
Yields about 32 bites

Ingredients
 1 egg
 3/4 c milk
 3/4 c flour
 3/4 tsp baking powder
 1/4 Parmesan cheese
 1 c shredded mozzarella
 2 TB minced red or green pepper (or a combination)
 1 TB minced onion
 1/2 c sliced black olives
 Pinch of salt and pepper
 1/4 tsp dried basil or 1 TB chopped fresh basil

Directions
1. Preheat oven to 400°.
2. Whisk first four ingredients together until smooth. Stir in remaining ingredients.
3. Grease a mini muffin pan and fill 2/3 full with mixture.
4. Bake for 15-17 minutes or until lightly golden. Cool slightly before removing from pan.
5. If desired, serve with pizza sauce for dipping.
