This is by far, one of the best salsas I've had. I have a soft spot for salsa verde because it's mild but packs a lot of flavor. Plus, the sweetness from the tomatillos is a little, added bonus. I've never made a salsa like this before and it's now one of my favorite things. I would be lying if I said I didn't eat a big spoonful every time I walked into the kitchen...

My husband loves Mexican food. He actually said he could eat it every day if possible. Well, in this house, that isn't going to happen unless he starts cooking. It's not that I don't like the food, it's just that I can't eat a lot of it. It's not my favorite thing. In moderation though, I'm good.

There's just something about chili in the fall. It's not quite winter, but the cold air is definitely on it's way so sometimes you just need that comforting warm up to remind you of the previous months. Feel Good Chips & Salsa
Chips and salsa...the perfect snack. I don't eat them very often, but when I do I use this recipe. It's definitely a good choice when you want a healthy snack and it's especially good when you use all fresh ingredients.
When it comes to making your own tortilla chips, the task is surprisingly easy. It's great because you don't have to worry about that big bag from the grocery store going stale or being loaded with grease. I almost always have tortillas in my fridge and they last a very long time so if the mood strikes, I'll just whip up a small batch and have myself a little snack.

Chicken Tacos
I suddenly had the urge for chicken tacos last night. I've never made them or even had them before. I decided to give them a shot, though, because it was new and I was feeling creative. I really had nothing to base them on or even compare them to but they turned out pretty good.
My husband seemed to really like them, too, so I'm definitely going to make them again. It was one of those dinners I could feel good about eating and serving because not only were they simple, but it was also a pretty healthy dish. Serve it with Spanish rice and some beans for a complete and balanced meal.

Rice with Some Spanish Spice
The first time I made this rice was for my son's Mexican food-themed 2nd birthday party. I happened to be sick at the time and I wasn't able to taste it as I cooked so I just had to wing it. I heard from many people at the party, including my husband who is one of the pickiest people I know, that it was some of the best Spanish rice they've ever had. Needless to say, that made one sick girl very happy.

Fun with Fajitas
Who doesn't love a good fajita now and then? Nobody, that's who! I dare you to find a person who hasn't enjoyed a yummy fajita at some point in their life. They're good with chicken or steak and you can even make them with just some veggies. I'm a fan of meat though so I definitely had to go that route. I've been craving some good fajitas for a bit now and decided to whip some up tonight. They are a fantastic dish that can turn a meal into a fun, little fiesta.
I'm one of those people who likes to use what they have on hand rather than go to the store to buy one or two specific items for just one meal. Well, usually. I guess there are exceptions to that rule, but this dinner was not one of them. Case in point: I didn't have any flank or skirt steak (which can get pretty expensive) so I improvised with some top round steak that I had in the freezer. It actually turned out to be really good and my son loved it! That's really what made this dinner worth it.

Everyday Enchiladas
I have been so incredibly busy the past week that it seems like I haven't even had time to breathe! I've been working on some wedding invitations for a friend just about every day since Thursday and the only time I stop working is to prepare a meal, turn on a show for my son, or change his diaper. I met this friend yesterday to get some ribbon for the invitations and told her and her fiance about the enchiladas I made a few days ago. I made them different than I have in the past because I'm trying to cut down on a lot of carbs. I used to make them with rice but I completely left it out this time. Well, I was so impressed with these enchiladas that I just had to share them the first chance I had.
